What I had for lunch today

Aloo gobi with edamame subbed in for the gobi (cauliflower), red lentil dal with tomatoes and Super Lucky Elephant rice.

Finally, veggies

Broccoli, artichoke hearts (TJ's frozen!), asparagus and cremini mushrooms, some capers, red pepper flakes and salt and pepper. Roast in a 425 degree oven for about 20 minutes or so while the rice and tofu are cooking. This took me about 45 minutes from start to finish, but bear in mind that I washed some dishes and blogged the experience.

Next, tofu

TJ's tofu is the best stuff I can get in Minnesota. In Wisconsin, the best stuff is Bountiful Bean Firm and we brought some back with us after our rainy walking tour of UW-Madison. Tonight's is pressed for about 20 minutes, then marinated in tamari, sesame oil, chili paste with garlic and a little lime juice, then fried.
